12 April 2025 – SJM Resorts, S.A. (“SJM”) is proud to support the Macao University of Tourism (“UTM”) with its “UTM First Lecture” Programme by developing the guided tour titled “SJM’s Creative Innovations in Classic Cuisine.” This initiative showcased three Forbes Travel Guide Five-Star restaurants for 2025 at the Grand Lisboa Palace Resort Macau: Mesa by José Avillez, Palace Garden, and Don Alfonso 1890. The tour provided students with immersive experiences in fine dining and luxury service, offering valuable insights as they explore various career paths in the tourism industry.

The tour began with a workshop led by Frederick Ma, the World Cocktail Champion and Resort Master Mixologist, at Mesa Bar. He introduced students to sustainable bar concepts that blend Portuguese and Macanese cultural traditions through a non-alcoholic mixology workshop. The journey continued with a visit to Palace Garden, where students learned how traditional Taishi cuisine has been reinterpreted using Western ingredients and modern culinary techniques. The final stop was Don Alfonso 1890, where students experienced the “Farm-to-Table” philosophy and discovered how classic Neapolitan dishes are adapted to local Macanese flavours, all while appreciating the restaurant's Baroque artistic elegance.

SJM aims to enhance its “Campus + Industry” collaboration model by turning the Grand Lisboa Palace Resort Macau into a real-world learning platform. This initiative has enabled students to connect theoretical knowledge with practical experience seamlessly. Looking ahead, SJM will continue to foster innovative educational initiatives that align with the Macao SAR Government’s “Building Macau Through Talent” strategy, nurturing future professionals for the city’s leisure and tourism industry.
